Dont know if this has been posted yet or not, but I'll just leave it here. Chua don't need to have a practical purpose, per se. They can just be fun, festive even, to deal with!

This is how I love my chua:
1/3 cup of Mirin
1/3 cup of light soy sauce
2 table spoons of sesame seed oil
1 stick of lemongrass sliced thinly
1 big chili, hotness to the taste but I prefer scotch bonnet
1 big chua
1/2 cup of sesame seeds
2 medium size tomatoes
1 small onion
Mix the mirin, soy sauce and sesame oil. Add thinly sliced lemongrass to the mixture. Put the skinned and chopped Chua pieces to marinade in this mixture for atleast two hours, but preferably over night.
Take the Chua out of the marinade. Pour the marinade in to a small cooking bowl trough a strainer to remove the lemongrass and bring to boil. Boil slowly on low heat for atleast twenty minutes to reduce and thicken the sauce. Let the sauce cool down alittle.
Chop the scotch bonnet peppers in to very small pieces, try to remember not to touch your eyes after you have touched the peppers or else you're on a fast trip to excruciating pain. Now mix the chopped peppers with the sesame seeds.
Skewer the Chua pieces with wooden skewers and glace the chopped chua pieces with the cooled marinade.
Now prepare the rice. Cook rice in a bamboo steamer. Meanwhile submerge the tomatoes in to boiling water for few seconds, untill the skin loosens up. Peel the tomatoes and remove seeds and chop the tomatoes in to small size cubes. Chop the onions thinly and sautee them on a pan untill golden and seetrough. Mix the tomato cubes, sauteed onion and rice together and put to wait untill Chua is done.
Grill the skewered chua for 4-6 minutes depending on the size on a japanese style yakitori grill or a traditional grill. Glace the skewered chua with the boiled marinade few times, but not just before ready and taken off the grill as this could potentially cause problems with contamination, even after the sauce is boiled. Roll the skewers over the scotch bonnet and sesame seed mixture untill you have coated them very lightly.
Serve the grilled chua with the previously cooked rice, and top the dish with some cilantro leaves. Some good light beer or sake goes very well with your fresly grilled Chua.
This is where you're doing it wrong - you should marinade the Chua alive, think of it like an exotic version of chocolate body paint. You'll be in for a wild night!
